On June 26, 2017 Bourke as an restricted free agent was not offered an agreement that was qualified from the Colorado Avalanche, thus ending his three-year stay with the team by release to the market for free agency. Without NHL contracts being offered during the course of summertime, Bourke signed a one-year AHL contract with the Syracuse Crunch on September 26 on, 2017.

As a free agent with his career prospects stalling, Bourke opted to pursue a European career, agreeing to a one-year contract with German club, Schwenninger Wild Wings of the DEL, on May 16, 2019.

As his output increased throughout his initial two WHL seasons Bourke at the time was small sized forward was picked 72nd overall during the 2012 NHL Entry Draft by the Colorado Avalanche. As the Cougars captain in his final junior season Bourke was the team’s top scorer with 56 assists, and was 2nd with 85 points but he was not able to assist Prince George qualify for the playoffs during 2013.14 season. Bourke was then signed on to an amateur try-out agreement to the Avalanche’s AHL affiliate known as The Lake Erie Monsters on March 19th 2014. A few days later, Bourke made an impact on his first professional appearance, scoring two goals and providing two assists in a 5-0 win against the Rochester Americans. With the Monsters being out of playoff possibility, Bourke finished the season with 7 points over 15 games.

Bourke was born within Onoway, Alberta, and was selected for his Prince George Cougars 26th overall in the 2009 Western Hockey League bantam draft after a bantam playing career in the PAC Timberwolves in the AMBHL. For the season 2009-10, he initially played with the Alberta Midget Hockey League with the St. Albert Raiders and was chosen as the AMHL best player before joining the Cougars after the conclusion of his midget season . He then joined the Cougars to start his major Junior hockey season.
