Dymock has joined ARL’s aligned Parramatta to kick off the season of 1996. Dymock was chosen as a representative of New South Wales as an exchange for the three matches of the 1996 State of Origin series. He was a player for the Eels throughout the remainder of the Super League war and the union of both the Super League and ARL into the current National Rugby League competition. He played as a five-eighth in two games of 1997’s State of Origin series, scoring a goal in game II. Then, He was picked to be a lock in game 3 of 1998’s State of Origin series. He played 112 games for Parramatta between 1996-2000.

Dymock assisted head coach Ricky Stuart at the Cronulla-Sutherland Sharks. He later returned to the Bulldogs. Dymock was also the head coach of the Tongan national rugby league team that played in the 2008 Rugby League World Cup. On 14 July 2011, Jim Dymock was announced as the Bulldogs new head coach, after Kevin Moore stood down from the position. However, on 14 November 2011, Dymock was replaced by Des Hasler.

The year 1993 saw Dymock became a part of Canterbury Bulldogs. Dymock was a player for Tonga in The 1993 Pacific Cup and in 1995. The 1995 season was the year that Dymock together with Dean Pay, Jason Smith and Jarrod McCracken, reneged on the terms of their Australian Super League contracts, using the term “unfair inducement” as the reason. This was later defended in the courts. While Dymock was able to join his own Australian Rugby League (ARL) competition, he was a part of the Bulldogs during the 1995 season, and was a part of the team’s win in the grand final against Manly. Dymock received the Clive Churchill Medal for man-of-the-match. Dymock was also a part of six games between 1995 and 1996 in Australia. The Australian player was part an Australian team which took home in 1995 the Rugby League World Cup in England.
