Knox was raised living in Quincy, Florida. Her parents divorced when she turned five years old, and she was aided by the aunt of her mother, Katie Bell, and her grandmother, Anna Mae Ponder, when her mother relocated to Chicago to become an assistant nurse. She didn’t meet her mom until the age of reached the age of nine and her father, until she reached the age of twelve. She moved in alongside her dad within the Harlem neighborhood in New York City, in 1969. Her name was changed and changed her name to “The Lady Chablis” when she was 16 years old and was living in Atlanta. “My mom was going to have a baby and she miscarried. The baby’s name was going to be La Quinta Chablis and she told me to take the name. I didn’t even know what Chablis was.”
In the mid-80s an opportunity to work at The Friends Lounge, a cabaret club located in Savannah, Georgia, resulted in her moving south of Atlanta.
She was a prominent character in John Berendt’s best-selling 1994 book Midnight in the Garden of Good and Evil, during her days working at The Pickup on Congress Street. She left her job in a dispute over pay.
Chablis’ autobiography Hiding My Candy: The Autobiography of the Grand Empress of Savannah was published in 1996, a year before she played herself in the Clint Eastwood-directed movie adaptation of Midnight in the Garden of Good and Evil, starring Kevin Spacey and John Cusack.
She began her work for The Prince George Inn, a gay-owned establishment, which was where she started a relationship with one of her coworkers. In 1975, she left the restaurant after the relationship was over, and re-entered work for Eckerd’s Drugstore. After being sick over the course of three days, she was forced to leave the job too. A new acquaintance, Linda, saw the decrease in Chablis health and arranged for her into her apartment with two bedrooms. Linda found a new job, this one at the Burlington Coat Factory outlet.

The Lady Chablis (March 11 1957 – September 8 September 8, 2016) is also known under the aliases The Grand Empress or The Doll was an American author, actress and transgender performer in a club. By being featured in the bestseller non-fiction novel Midnight in the Garden of Good and Evil and its film adaptation in 1997 she was among the very first transgender performers to be known to a wider public.
Chablis began her career when she was 15 years old at Chablis’ first gig at Fox Trot gay bar in Tallahassee. There she made friends with Cliff Taylor, who performed under the pseudonym Miss Tina Devore. The first man from Quincy which Chablis ever met dressed in a costume. Taylor was willing to let Chablis remain with him in the event that she relocated to Atlanta. She made the move in 1974, at the age of seventeen years old. She was previously living at the home of her aunt Tallahassee for around 18 months.
In the early 1990s, she moved with her partner, Jesse, to Columbia, South Carolina, where she began working at a new spot, The Menage. The Menage closed after three years, due to new competition, and Chablis did not find much work for a couple of years.
