Foy returned after missing the 2010-11 season. He was signed by the Stockton Thunder of the ECHL with the goal of achieving his best performance since 2006-07, when Foy led Houston with 47 points and 27 goals.
For the 2015–16 season, he left the DEL with Berlin and signed a contract with the Eispiraten Crimmitschau from the DEL2.
On the 28th of September in 2009 Foy agreed to sign a single-year deal for the Arizona Sundogs of the Central Hockey League. Foy was injured during the opening evening of the 2009-10 season , and was allowed to leave the CHL in mid-November. Foy returned to play seven games for the Sundogs with 3 assists before suffering a season-ending injury on February 13th, 2010.

Foy was born from Oakville, Ontario, Foy was selected as a Minnesota Wild 175th overall in the 2002 NHL Entry Draft. The Minnesota Wild drafted him playing for Merrimack College in the NCAA. After that, he transferred for the Ottawa 67’s team of the OHL. The 2002-03 season was when the 67’s Foy played in one of the most dominant tandems of the history of OHL together with fellow teammate Corey Locke. Foy spent most of the seasons of 2005-06 and 2006-07 playing for the Houston Aeros, Minnesota’s top farm team of the American Hockey League (AHL). The 2007-08 season was the last time he played for the Wild all season long and played in 28 games and scored four goals, along with four assists, and logging an additional 28 minutes of penalty time.
The 14th of July, 2008 Foy was officially signed as free agents from the St. Louis Blues to an agreement for one year. Foy was then transferred to their Blues AHL affiliate known as the Peoria Rivermen to kick off in the 2009-08 season. In March of 2009 following being suspended for six games because he left the bench to take on with the Aeros’ John Scott, Foy quit the Rivermen as a team member not citing “personal reasons”. He played only four games in the entire season following being struck by an injury in the training camp.
On July 4, 2012 it was announced that Foy has signed a one-year contract with six time German champion Eisbären Berlin. In the next 3 years, he played for Berlin and scored 75 points and 33 goals in 130 games.
