Knackstedt was a major junior player when he joined the ranks of his team the Red Deer Rebels of the Western Hockey League (WHL) in the 2004-05 season. Three seasons later, during his draft year the club traded him for the Moose Jaw Warriors and put up 56 points between the two teams. Then, he was drafted in the seventh selection, at 189th overall, by Boston Bruins in the 2007 NHL Entry Draft. After returning with the Warriors, Knackstedt recorded a leading team score of 85 points and placed seventh overall in scoring for the league. After the WHL season Knackstedt was assigned by Boston to finish 2007-08 playing for Boston to join the Providence Bruins of the American Hockey League (AHL).
On the 9th of December 2010 the team traded him together alongside Jeff LoVecchio to the Florida Panthers in exchange for Sean Zimmerman and a conditional seventh round selection for the NHL Entry Draft.
After a successful season with the Condors, Knackstedt opted to resume a European career in signing a one-year deal with Rubin Tyumen of the Russian second league the VHL, on August 6, 2014. He endured a journeyman 2014–15 season, transferring to fellow VHL club, Saryarka Karaganda before finishing the season in Germany with ESV Kaufbeuren of the DEL2.
