Castori was in charge during the 2008-09 season as the head coach of recently promoted Serie B side Salernitana. He was then successively dismissed in December. He was substituted by Bortolo Mutti. He was called back in February then dismissed in April. He was then replaced by Fabio Brini, who led the team to safety.

On 3 November 2010 he returned into management as head coach of Serie B relegation-threatened club Ascoli. On 2 November 2011 he was sacked because of bad results. Ascoli is currently last in Serie B.

Since 12 June 2012 he is the new head coach of Varese in Serie B.

On November 11, 2007 after a loss of 1-4 to Rimini in an derby in the region and just seven points scored during the first 14 matches, Castori was dismissed by Cesena after four years in charge of the bianconeri however, he was reinstated in his managerial position just three months after Giovanni Vavassori’s demotion on February 25, 2008. his return at Cesena was however unproductive since the bianconeri were dropped into Serie C1 at the end of the season.

Castori is a native of San Severino Marche, but was raised in Tolentino. He began with coaching in the year 1980 at 26 years old, and was the head coach of the Seconda Categoria team Belfortese from Belforte del Chienti. At first, he was a manager in amateur football teams after spending the last three years in Seconda Categoria (second-lowest division in Italian football) and three more in Prima Categoria. He also coached an Italian Promozione squad, Cerreto, to reach Serie D in 1990 (there was no Eccellenza division at the at the time). From 1992 until 1998, Castori directed the Eccellenza team Tolentino and led Tolentino up to Serie C2. In 1998-99, he was awarded the Serie D league and a Scudetto Dilettanti with Lanciano. After a disappointing Serie C1 season with Castel di Sangro and then he was back to Lanciano in 2000 and soon took home Lanciano the Serie C2 league. He remained with Lanciano until the year 2003.

In the summer of 2003, the head coach was named in the Serie C1 team Cesena. In his first season, he guided Cesena to victory in promotion playoffs and also the Coppa Italia Serie C. but this was masked by a three-year ban placed for him following his involvement as the an active participant in a riot during the second stage of the finals of the promotion playoffs against Lumezzane. The ban was gradually reduced to 2 years after an appeal for pardon by Castori himself. During this period, Castori was unable to be the head coach, but even so being confirmed, he was Cesena’s head coach, and the assistant coach Massimo Gadda in his dugout up to the 23rd of January.

He was then appointed in June 2009 as new head coach of Piacenza for the upcoming 2009–10 Serie B season, being however dismissed in November due to poor results.
