He was selected as 142nd overall by the Toronto Maple Leafs in the 2013 NHL Entry Draft.
Following a breakthrough season during which he scored an all-time high of 22 points in his first game in the Lions in 2015-16, Herzog agreed to a two-year extension to his contract on April 29th the 29th of April, 2016.
On November 16, 2018, Herzog signed a two-year contract with HC Davos for the 2019–20 season and through the 2020–21 season.
After being selected for The Maple Leafs in the off-season, Herzog opted to play major junior hockey in North America in the Quebec Major Junior Hockey League following being selected 41st overall for the 2013 CHL Import Draft by the Quebec Remparts. Herzog was quickly able to adapt to his new Remparts and was among the top scorers of the team with an average of 58 points across 61 games. After a post-season opening round loss, Herzog continued his 2013-14 season, signing an amateur try-out agreement for Toronto’s Maple Leafs American Hockey League affiliate The Toronto Marlies, on April 3rd of 2014. Herzog was a part of five scoreless games for the Marlies.

As a youngster, Herzog played local team Pikes EHC Oberthurgau before joining the junior section from EV Zug. In his second year of Elite Junior A, Herzog made his professional debut for EV Zug in the 2012-13 season, playing in 20 games, scoring four points.
The 6th of June, 2014 with no an offer of a contract to the Maple Leafs, Herzog opted to develop his skills in his native country, returning to EV Zug on the basis of a one-year agreement. In the 2014-15 season, Herzog signed an extension of two years with the top NLA club ZSC Lions to commence next year.
Herzog first played in the Swiss national program at the 2012 IIHF World U18 Championships. He later made his full international debut after he was selected to the Swiss national team to participate at the 2017 IIHF World Championship in Germany/France. Herzog impressively scored the game-tying and overtime winning goal for Switzerland in a round-robin comeback win over Canada on May 13, 2017.
