Joe Fishback (born November 29 1967, in Knoxville, Tennessee) is an ex- American football safety who played in the National Football League for the Atlanta Falcons, New York Jets as well as the Dallas Cowboys. He played in the NCAA football tournament on the campus of Carson- Newman University.
On the 3rd of November in 1992, he was became a free player to the Atlanta Falcons. He played in the final seven games, completing seven defensive tackles as well as eight special-teams tackles. On the 23rd of August 1993, he had been placed as an injured reserve because of an injured neck. His release was on the 4th of October.
On October 13, 1993, he signed as a free agent with the Dallas Cowboys. He played mainly on special teams and registered 12 special teams tackles (tied for sixth on the team). He suffered a sprained right knee in the tenth game against the Phoenix Cardinals and was declared inactive for the next 5 contests. He was a part of the Super Bowl XXVIII Championship team. He was released on November 30, 1994.

As as a senior, he finished second in the NAIA’s player of the Year poll and recognized as the Conference “Defensive Player of the Year”. He was a part of four consecutive NAIA Division I championship games from 1986 until 1989, claiming the title in 1986, 1988 , and 1989. He completed the season with 293 tackles with eleven interceptions (3 returned to score touchdowns) and the 21.6-yard average on seven return punts (2 returned to score touchdowns).
Fishback was released as an undrafted free-agent by the New York Giants after the 1990 NFL Draft. He was injured in his third game of the preseason of the season and was put as an injured reserve with a transverse process injury on the 27th of August. The team released him in November.
On March 13, 1992, he signed in Plan B free agency with the New York Jets. He appeared in the first five games, collecting 4 special teams tackles. He was cut on October 20.
