He last played for the Edinburgh Capitals in the Elite Ice Hockey League. Staal was previously part of the Carolina Hurricanes (NHL). He is the younger brother to Eric Staal, Marc Staal, and Jordan Staal, both of the Minnesota Wild. He is also the cousin to Jeff Heerema, who was formerly with the Nottingham Panthers.

In exchange for a fifth round draft pick, the Carolina Hurricanes purchased his rights from Phoenix Coyotes on May 13, 2010. The Hurricanes signed Jared to a three year entry-level contract on May 14, 2010. Jared was assigned to their AHL affiliate, Charlotte Checkers, by the Hurricanes for the 2010-11 season. After 12 games, Jared struggled to get ice time and was reassigned to the Florida Everblades, an ECHL affiliate. He was later recalled. Staal was recalled to Charlotte Checkers for the 2011-12 season. The Hurricanes loaned Staal to the Providence Bruins, an affiliate of Boston Bruins in the AHL, for the remainder 2011-12 season.

After five seasons within the Hurricanes organization, Staal was released as a free agent in the summer. With limited NHL or AHL interest, Staal signed a one-year deal with the Florida Everblades of the ECHL on October 7, 2015. Prior to the 2015–16 season, he was traded by the Everblades to the South Carolina Stingrays on October 15, 2015.

On July 4, 2016, Staal signed abroad to a one-year contract with the Edinburgh Capitals of the EIHL.

Staal signed an amateur tryout contract on April 3, 2009 with the San Antonio Rampage (AHL affiliate of the Coyotes). In 2009, he appeared in five games with the Rampage. However, he was sent back by the Sudbury Wolves to complete the season.
