Paul Virant (born February 25 in 1970) is the chef and proprietor Vie, a restaurant in Vie at Western Springs, Illinois, and Vistro in Hinsdale, Illinois. His contribution to cooking includes the introduction of innovative canning and preservation recipes for the restaurant industry which culminated in the release of his cookbook The Preservation Kitchen: The art of Making and Cooking with Pickles, Preserves, and Aigre-doux (co-written with Kate Leahy and photographed by Jeff Kauck).

After receiving a bachelor’s diploma in nutritional science from West Virginia Wesleyan College, was accepted into the Culinary Institute of America (CIA) located in Hyde Park, New York. After completing his culinary education and CIA, he proceeded to further improve his techniques at the March restaurant located in New York City where he worked alongside chef Wayne Nish and Hilary Gregg. After two years Chef Virant was transferred to Chicago where he worked in various restaurants like Charlie Trotter’s, Ambria, Everest and Blackbird.

Virant is a fervent advocate for family-owned, local farms. He also frequents his local Green City Market, Chicago’s outdoor farmers market , which offers locally grown, sustainable food that aims to connect local and regional farmers and producer directly to the chefs, and with the community. Virant is also on the advisory board of SAVEUR’s chef in the capacity of the SAVEUR Tastemaker(tm).
