Skoubo was born in Holstebro and played for several lower league clubs. Skoubo played eight games for Denmark’s under-21 national team and scored three goals. Skoubo made his breakthrough in 2001-02 at the Danish Superliga club FC Midtjylland. He scored 19 goals in 27 games in that season. Skoubo switched to Borussia Monchengladbach, a German club that was renowned for wanting him to join their team at the beginning of the next season. Skoubo made his debut in the Danish national team while in Monchengladbach on 11 June 2003.

His club career in Monchengladbach didn’t take off, and he was sent to West Bromwich Albion for loan in January 2004. After six months, he was back in Gladbach after only two games for West Bromwich. After a disappointing season in goal scoring, the Danish Superliga runners up Brondby IF needed new strikers for their 2004-05 season. Skoubo returned to Denmark as part of a EUR600,000.

In August 2008, Skoubo was transferred to Dutch Eredivisie club FC Utrecht. Here, Skoubo was not able to break through, and in Summer 2009, he was loaned out to fellow Eredivisie side Roda JC. At Roda, Skoubo has had some impressive displays, and seems to form a perfect partnership in forward position together with fellow Dane, Mads Junker.
