Pavon was appointed Bordeaux’s head coach on 24 October 2003. He replaced Elie Baup and received a two-year extension. He was diagnosed with a heart condition in 2004-05. He missed the final three games of the campaign. President Jean-Louis Triaud announced that Pavon would be leaving the club. However, he continued to work as a scout function at the club, while Ricardo Gomes assumed control.
Pavon was rumored to be moving to Olympique de Marseille during his final years with Bordeaux. He was born in Bordeaux but he loved Bordeaux so much that he ignored all rumours. His last match against RC Lens took place on 26 August 2000. After four seasons of success, Pavon decided to leave the Girondins and play in his homeland, signing a three year contract with Real Betis Segunda Division. He was 32 when he suffered a serious injury.

Pavon was born in La Ciotat (Bouches-du-Rhone), to a Spanish father and a French mother. He started his professional football career at Toulouse FC on 7th November 1986, when he played his first Ligue 1 match against Paris Saint- Germain FC (a 3-2 away win). He was selected for France’s under-21 team during his time at Toulouse. He scored seven goals in the last season.
Pavon was granted a two-year contract in 1994 to move to Montpellier HSC. He signed with FC Girondins de Bordeaux after his contract expired. His enthusiasm and hard work earned him a loyal fan base. Within a short time, he was elected captain and helped the team reach the finals of the League Cup in 1998 and 1997. In 1999, they won the top division title.
In late May 2010, Pavon returned again to Bordeaux, being named newly appointed coach Jean Tigana’s assistant. In February of the following year, he left his post.
