He has interests in traditional market halls and sustainable food culture. His work includes wineries, food halls, and farm-to-table restaurants. He was a member of the 2014 board of directors for Center for Urban Education about Sustainable Agriculture. He has lectured about, written about and restored buildings built by early pioneers in California’s Beaux- Arts movement over the past 20 years.

Baldauf graduated from Yale with a Bachelor’s of Arts in History Arts and Letters in 1981. He organized an event that brought together five students to examine the economic and cultural issues affecting New Haven, Connecticut. His artistic development was influenced by Kent Bloomer’s work and the Third Bay Tradition. Hans’ senior thesis focused on the interplay of public and private property as reflected in the architecture of Sea Ranch, California. In 1988, he earned a Master of Architecture from Yale. Soon after, he began designing The Sea Pine House in Sea Ranch. He also worked as an architect in Tom Beeby’s Chicago firm.

In 1997 Hans formed the architectural and design firm BCV alongside two other former BAR architects. The firm was chosen to design the San Francisco Ferry Building Marketplace in 1999. Prior to its restoration the ferry structure had, over the years, grown derelict–standing apart from the modern transportation infrastructure of San Francisco. Hans’ vision of its redevelopment included brick arches with custom metal folding gates and a restored historic 660-foot long grand nave. The building now serves as popular market hall.
