Esther Shahamorov was born in Tel Aviv, Israel, to an Ashkenazi Jewish family. She was married in 1973. was married Peter Roth, a gymnast who was her coach. She has one daughter, Yaron (born in 1974) who was a champion at national level in fencing, as well as one daughter Einat. After her retirement from competitive sports, she was a school teacher for sports.
She appears in the 1999 Oscar-winning documentary One Day in September in which she gave her impressions and feelings during the 1972 Munich Athletes hostages crisis.
In 1999, Roth was awarded the Israel Prize for sports.

Roth has won five gold medals as well as a silver medal at the two Asian Games. She was awarded gold medals in pentathlons and 100m hurdles and silver in the long jump in 1970 and three gold medals, in 200m, and 100m hurdles in 1974.
In 1972, at the Summer Olympics at Munich, Roth just barely missed the cutoff to compete in the finals of the 100-meter race. She was a finalist in the 100-meter hurdles semifinals however, she resigned from the Games along with the other members from the Israel Olympic team, following she was murdered along with her former trainer, Amitzur Shapira, and 10 other athletes from the Israeli team by Palestinian terrorists.
In 1976 Summer Olympics in Montreal where she was the Israeli flag-bearer, Roth became the first ever Israeli athlete to reach the finals in any Olympic event, and she is still the only Israeli Olympic finalist in track events, when she finished 6th in the 100-meter hurdles with a time of 13.04 seconds.
