Joubert started refereeing as a teenager. the opportunity to take up the sport through his father Des who was a provincial referee. He began his career in the corporate banking industry for five years before deciding to go full-time in refereeing. He was a member of the KwaZulu Natal Rugby Referees Society.
Joubert was a referee in first-class games within South Africa since 2003, for matches in the Vodacom Cup and Currie Cup competitions. He also refereed for the World Rugby Sevens circuit in 2003 and 2004. He has been on the Super Rugby refereeing panel since 2005. He also refereed international test matches since 2005. debuting during a match against the United States and Wales.
He refereed a further five matches in the 2006 Super 14 season – which included his first appointment to a match played in South Africa in the trans- Jukskei derby between the Bulls and the Cats – and in domestic action in the 2006 Currie Cup Premier Division. He refereed in both those competitions throughout 2007 and 2008, and also took charge of the promotion/relegation play-off match between the Boland Cavaliers and the Griffons.
After taking charge of seven matches in the 2009 Super 14 season, he refereed the British and Irish Lions’ match against the Golden Lions during their tour of South Africa. He took charge of both matches between New Zealand and Australia hosted in New Zealand in the 2009 Tri Nations Series, as well as the 2009 Currie Cup First Division final between the Pumas and the SWD Eagles.
As of 2003, Joubert was officiated at various first-class matches at the domestic South African competitions, appearing in the Vodacom Cup and Vodacom Shield at the beginning of the year. He then took control of games during the Currie Cup qualifying rounds, the First Division and eventually in the Premier Division of the Currie Cup after he was appointed the manager of the game against both the Griquas along with Kimberley’s Pumas of Kimberley.

Craig Paul Joubert (born 8 November 1977) is a South African professional rugby union referee, as well as the Referee Development Coach of World Rugby.
After the domestic championships Joubert enlisted in his first season on the World Sevens Series circuit. Joubert was back in action domestically in 2004 for the Vodacom Cup and the 2004 Currie Cup competitions and was appointed to the South African refereeing panel for the 2005 Super 12 season. He was the official at his debut Super 12 match in Sydney in which his team, the New South Wales Waratahs beat the Chiefs 25-7 in the first round of the tournament. The two appearances continued with another appearance in Sydney where the Waratahs took on the Crusaders and also in Dunedin when the Highlanders were host to the Waratahs.
He officiated his first test match in June 2005, when he took charge of a match between the United States and Wales in Connecticut, before again officiating in the South African domestic Currie Cup competition, where he refereed the First Division final between the Falcons and the Pumas.
