In 2012 Gabbitas released her debut book Welcome to The World Of Felicity Fly. The art of poetry has been an important aspect to Gabbitas. 2013 was the year she launched a brand new eight-live rhyme program that was backed by of then Education Secretary Michael Gove. The initiative is in the form of a contest held every year where students of primary school age invited to write poetry on the subject of their choice. They are then evaluated by the judges of a panel which includes former Ambassador as well as an official Entrepreneur-in- Residence at The Business & Intellectual Property Centre at The British Library Dr Stephen Fear. The top poetry are then published as a book during the autumn of every year. The topics have included teamwork, friends, eating well, and music. Gabbitas also had a meeting with Fear during World Book Day 2015, where she was interviewed by the British Library about her books.

In both 2015 and 2016 Gabbitas was invited to attend the Sharjah Children’s Reading Festival in the United Arab Emirates where she held storytelling and poetry workshops, and promoted the eight line rhyme initiative.
