Born from Loveland, Colorado, Harstad played at the forefront of Thompson Valley High School to an overall conference championship in his junior year, and a state champion runner-up during his senior year. In a distinct Big 12 Conference region of the United States, Harstad instead signed to play for Tony Barone at Creighton University in the Missouri Valley Conference school in Nebraska. After he was enrolled, one year later, in autumn 1987, he had a huge impact immediately for the Bluejays. They averaged 9.0 scores and 8.5 each game. his rebounding percentage was fourth highest among NCAA Division I for freshmen. He was a starter in every game — something that he did for the rest of his career, as Creighton was able to finish with a record of 16-16 overall.
