Latry is a native of Boulogne-sur Mer, France. After beginning the musical training in Boulogne sur Mer In 1978, he was took part in the organ classes of Gaston Litaize at the Academy of Saint-Maur and also took the composition class with Jean-Claude Raymond at the Paris Academy. In 1983, he was appointed Professor of Organ at the Catholic Institute of Paris in 1983, and then to the Academy of Rheims, he was appointed successor to Gaston Litaize at the Academy of Saint-Maur in the year 1990. The year 1995 saw Latry appointed professor of organ at the Academy of Paris, a job he shared alongside Michel Bouvard.

In 1985, aged 23 years old, Latry was awarded the post of one of the four grand orgues in Notre-Dame, Paris together with Yves Devernay, Philippe Lefebvre [fr] and Jean-Pierre Laguay in the wake of the death of Pierre Cochereau.
