Nairn opened Nairns in Glasgow in 1998, and a Cook School at Lake of Menteith in 2000. He sold his restaurant in Glasgow in 2003 to focus on the cookery school. However, he still does a variety of corporate work. He opened his second cooking school in Aberdeen in 2012.

In December 2017 Nairn was the victim of an assault in Aberdeen.

Nairn was a regular host on BBC’s Ready Steady Cook in 1995.
