On February 10, 2017, Latu played for the Indigenous All Stars against the World All Stars in the 2017 All Stars match, coming from the bench on interchange during the 34-8 win in Hunter Stadium. On the 6th of May, Latu made his international debut for Tonga scoring two scores in their 2017. Pacific Test match against Fiji.
Latu made his debut for the Gold Coast in round 1 of the 2018 NRL season against Canberra which ended in a 30-28 victory. Latu made a total of 6 appearances for the Gold Coast as the club finished in 14th position on the table.
Latu was limited to only three games for the Gold Coast in the 2019 NRL season as the club endured a horror year on and off the field which saw them finish last on the table.
3 May was the day that Latu was a player for his club, the New South Wales Residents against the Queensland Residents. Then, in Round 21, of 2015’s NRL season the player played the NRL debut with the Panthers against the South Sydney Rabbitohs. On September 14 the following day, he signed with the Panthers for a two-year deal through the year 2017. On the 27th of September Latu was selected as a Lock in the 2015 New South Wales Cup Team of the Year. On the 9th of October, Latu was named to make his international debut for Tonga in their 2017 World Cup qualifying match against the Cook Islands, though he was substituted by 18th man David Fifita in a late substitution.

In 2011 Latu was the captain of his team the Canterbury-Bankstown Bulldogs to the grand final of the S. G. Ball Cup and then he joined the team’s National Youth Competition team, which he played until the year 2012. He then was promoted from his place on the Bulldogs’ New South Wales Cup team.
