Akins was a redshirt sophomore in the year 2016, Akins was a regular in all 13 UCF games, racking up 23 receptions, gaining 347 yards and two touchdowns.

On May 10, 2018, the Houston Texans signed Akins to a four-year, $3.32 million contract that includes a signing bonus of $761,520. In the season opener against the New England Patriots, Akins had two receptions for 11 yards in his NFL debut. He played in 16 games with six starts, recording 17 receptions for 225 yards and no touchdowns.

The Houston Texans selected Akins in the third round (98th overall) of the 2018 NFL Draft. Akins was the fifth tight end drafted in 2018. He also became the highest drafted tight end in UCF’s history.

Akins began the year as a starter, but he suffered an injury that ended the season in the 3rd game with Furman. He decided to wear an official redshirt for medical reasons.

Akins was a graduate of Union Grove High School in McDonough, Georgia. He signed and committed to play football with UCF Knights. UCF Knights, choosing the Knights over other schools like LSU or Georgia. After being selected in the Texas Rangers in the third round of the 2010 MLB Draft, he chose to pursue a professional baseball career instead of studying at UCF and joined the Rangers.
