Chiu was born in Ithaca, New York. Chiu was a serious student of music at William Eltzroth at Butler University in Indianapolis, IN, with Karen Shaw (and also studied computer science) at Indiana University, then pursued his training within New York at the Juilliard School where he was a student alongside Abbey Simon. He also took classes alongside Aube Tzerko, Marvin Wolfthal and Marian Rybicki. Through his early period, he was a winner of many piano competitions, including his participation in the Kosciuszko Foundation Chopin piano Competition as well as the Music Teachers National Association Competition both in 1984. He was recognized with an American Pianists Association Fellowship (formerly called the Beethoven Foundation) in 1985. He was awarded the Petschek Award by the Juilliard School in 1994. This resulted in a performance at Alice Tully Hall in Lincoln Center. He was also given with the Avery Fisher Career Grant in 1996.

Following studying, Chiu moved to France in the year 2000, where he stayed throughout 12 years. His professional career did not take him into the international circuit of piano competitions. His recording career started in 1991 , with Harmonia Mundi USA, with the well-received publication of a piano transcriptions. Then he embarked on the recording of the entire solo piano work composed by Sergei prokofiev. The repertoire he recorded comprises Mendelssohn, Rossini, Chopin, Liszt, Grieg, Brahms, Ravel, Decaux, Schoenberg, Schubert, Prokofiev and Saint-Saens. The recording was of his version of the Liszt arrangement for piano solo from Beethoven Symphony #5. Beethoven Symphony #5. In the year 2015, he released his first Classical piano album under the Yamaha Entertainment Group label, Distant Voices: piano music from Claude Debussy & Gao Ping. In 2016, he debuted an album entitled “Hymns and Dervishes” which contains a selection of Middle-eastern music as well as Western inspired pieces from Gurdjieff and de Hartmann. The album came out on Centaur Records. In the year 2019, Centaur will also release a recording of chamber music that features Violinist William Harvey, including the Schubert Fantasie in C for violin and piano. In 2019, Centaur will release a recording of two Beethoven Symphonies (V and VII) transposed in the hands of Franz Liszt, produced by three-time Grammy producer of the year Judith Sherman.

Chiu is a Yamaha Artist. In 2014, he marked his 25th anniversary as a Yamaha Artist with special commemorative events, including concerts at the Newport Music Festival and in New York City at Miller Theatre. He has been a notable supporter of Yamaha’s new products, including the CFX line of grand pianos, the Disklavier Mark IV, DisklavierTV, the PSR-OR700 Keyboard, the GranTouch, the AvantGrand and Yamaha Entertainment Group’s recording label. He was the first Classical artist to record for YEG, in 2015, with the release of Distant Voices, available on three platforms: Audio CD, Video DVD and DisklavierTV.
