In Rheden, Breukink was born in a family of cyclists, since his dad Willem Breukink was director of the Gazelle bicycle manufacturing facility. In spite of this, he decided to become a soccer player. In the year 1980, he switched to pursuing a cycling career. In 1982, this seemed to be a wise option, as he was able to win the Dutch national championship of juniors’ pursuit. In 1984, at the Olympic Games, Erik Breukink participated with Gert Jakobs Maarten Ducrot, and Jos Alberts, in the 100km Team Pursuit and finish fourth spot. As of 1985, Breukink was the winner of two time trials in the Olympia’s Tour and was 3rd overall. Breukink decided to change to a professional job.

Breukink made his professional debut in 1986 with his Skala-Gazelle team. Breukink proved to be a time-trial specialist as well as a skilled climber. When he made the course of his Tour de France debut in 1987, he was victorious on one stage, and was second in the category of young riders. The most notable achievement he made on the major stages was in during the 1998 Giro d’Italia, where he began his career with a second place and won the Gavia Pass stage during the midst of a snowstorm. The 1998 Tour de France he won the classification for young riders and was 13th in the overall standings. In 1989’s Tour de France, he demonstrated his time trial skills in winning the Prologue and also wearing his yellow shirt for a single day. In the Giro d’Italia, he almost took the title, but lost his lead during the Dolomites because of lack of appetite. The year 1990 was the time Breukink determined to work on his Tour de France, so his team was changed onto his PDM team, which enabled him to achieve this. The year 1990, in the Tour de France, the results were good with two wins and coming in third overall. The results could be better, however Breukink was hit by a bit of bad luck: during the climb up to the Tourmalet, Breukink was forced to change bicycles three times. In the year 1991 Breukink as well as the team from PDM had to withdraw from the race in 3rd place in the official rankings due to food poisoning. However, it was later discovered that it was caused by Intralipid. In 1992, he was unsteady, particularly during his time trials, which he loves the most. Then, in 1993 Breukink made the switch onto ONCE. ONCE team, and his performance was improved. But he had a bad luck in the days prior to the beginning in the 1993 Tour de France, he was struck by a car testing the newly-designed Lotus 110. The injury to his left knee led him to abandon the Tour. Breukink took part in his way through the Tour de France four times following, but did not reach the same level as before. In 1997, he concluded the professional cycle career having completed eleven Tours de France and won four stages. He was a winner in 61 races in all.
