Permut was born in New York City, New York to an Jewish family. He was the son of the entrepreneur Lee Permut. His father relocated the family out of Manhattan and moved them to Los Angeles while he was in the teen years. As a young man selling maps, he visited the Hollywood residences of celebrities and later joined those at Palm Springs Racquet Club and the Tennis Club, after his father bought a second residence located in Palm Springs in the 1970s. The director Bill Sargent through his father who hired Permut and tasked him with contacting agents to find a casting agent for the stage show which he hoped to film. The project did not come to realization. Permut later worked as gofer for Roger Corman while he was studying at UCLA and was later offered an offer at an agency for independent talent located in Beverly Hills.
In the beginning of his career, Permut was the producer of the film Give ’em Hell Harry! He then produced his 1987 film Dragnet as well as Blind Date. Later, he made his own John Woo film Face/Off. Permut has produced a range of other films that include the 1991 film The Marrying Man and 29th Street as well as 1991’s Captain Ron and Consenting Adults and The Temp in 1993, The Temp, 1994’s Surviving the Game and others. 29th Street (1991) was released from Twentieth Century Fox. Permut was a collaborator together with Bob Saget on the March of the Penguins parody film Farce of the Penguins in 2007. Permut also produced the movie Hacksaw Ridge, which was presented in the Venice Film Festival. The film received a prestigious reception.
As of 2016, Permut has lived in Westwood, California. He has a second home in Palm Springs with his partner, John Seiber.
