The year 1999 was the time Helou made a change in her own life by selling several items at Christie’s. She also removed her Victorian home and bought two-storey warehouse in Shoreditch that she transformed into a minimalist, modern living and work space. After completing The Sotheby’s Works of Art course and her Sotheby’s Works of Art course, she joined the auction house and became its representative in the Middle East. At the age of 24 She opened an antiques store in Paris in the following year, and soon after she became a consultant for art working in London. From 1978 to 1986 she was in Kuwait serving as an advisor to the members from the royal family. She then returning to London in 1986.
A friend of hers in the publishing world and influenced from The Lebanese Civil War, Helou wrote her first cookbook, Lebanese Cuisine. The book was published in 1994. Lebanese Cuisine was published. Robert Irwin described it as “no mere utilitarian manual, but a wistful evocation of feasts and picnics held in an easy-going, Levantine environment which all but came to an end … in 1975”. The book was nominated for the Andre Simon Award.
In 2013, Helou was listed by Arabian Business as one of the 500 most powerful Arabs in the world, and one of the 100 most powerful Arab women.
